Smoked Sausage and Veggies

Prep Time: 15 Min. Cook Time: 10 Min. What you need:

+ 2 small red potatoes,cubed
+ 1/2 c. water + 1/2 c. green peppers, julienne + 1/2 - 1 mild banana pepper, cut into rings + 1 small onion, cut into wedges + 2 cloves minced garlic + 2 tsp. canola oil + 1/3 lb. smoked sausage, sliced + 1 1/2 c. cole slaw mix What to do:
1. In a microwave-safe bowl, combine potatoes and water. Cover and microwave on high for 3 min. or until almost tender; drain well.
2. In a small skillet, sauté the potatoes, peppers, onion and garlic in oil until tender. Stir in sausage and coleslaw mix; heat through. Editor's Note: This recipe was tested in a 1,100-watt microwave. Nutritional information:
